Food For Thought | Raw Vegan Chocolate Frosting or Pudding

I recently bought a Gluten-Free Vanilla Cupcake mix but realized that I didn’t have any frosting. Most frosting’s are full of artificial sugars and just plain old nasty ingredients that I am not too fond of putting in my body. I wanted to see if I could come up with my own frosting recipe using ingredients from my fridge. I decided to throw a few ingredients together and see how it worked out. I love that this frosting is completely raw and contains Avocados which are a very healthy and filling fat. This frosting is delicious. The consistency is very thick and creamy and could definitely be eaten on it’s own as a pudding!

Ingredients:

2 large avocados, pitted and scoop out flesh from peel
6 tbsp raw cacao or cocoa powder
1/3 cup agave syrup (or use pitted dates for a thicker consistency which would be great for pudding)
1 tsp vanilla extract
Dash sea salt
Dash cinnamon (optional)

Mix ingredients in a food processor, high speed blender or hand-held blender. Ice cupcakes and/or cake or eat as a pudding! Yum.

I used this recipe to frost my gluten free vanilla cupcakes but am saving the left over mix to eat as a pudding for dessert :)

Love and compassion are necessities, not luxuries. Without them, humanity cannot survive.

I spent the past week on Long Island visiting my boyfriend. I was able to meet up with some of my friends(Natasha, Danielle, LeeLee and Holly) but like usual I tend to plan too many things and end up having to reschedule with someone because either everyone can only hangout on the same day or I just am too overtired to hangout at the end of the week. I am terrible at listening to my body sometimes. Whenever I make plans I fully intend on keeping them and I want to keep them but then my health issues sometimes come up and I feel bad about having to cancel plans or reschedule. I have to start to plan better and to accept the fact that although I would love to do everything, that I unfortunately do not have the physical stamina that I would like to have. This doesn’t mean I can’t achieve everything I want to, it just means I have to go at a different pace. I’m getting there. Slowly but surely!

Thankfully I have the most amazingly supportive and compassionate friends who have been there for me throughout the years with my struggles with my health issues and have never made me feel bad for having to cancel or reschedule and are always so incredibly supportive. I made a promise to myself a few years back to only surround myself with genuinely kind and compassionate people. It just isn’t worth it to me otherwise. I am also blessed to have the sweetest and most caring boyfriend in the world. I honestly sometimes wonder how I would manage with my health issues if I didn’t have the family, friends and love that I do in my life. I am incredibly thankful every day for it. No matter how bad things get they could always be worse and I pride myself on trying to always focus on the positives in life.

Natasha, Me, Danielle.

I met up with Natasha and Danielle and we went to Witches Brew. We had a great time hanging out and indulging in yummy tea and desserts. Later Natasha’s good friend Chris came by and hung out with us. He was hilarious and we all had such a good time. I love those moments when you can truly be yourself around your friends and laugh and have so much fun just sitting around talking, making jokes and sipping on tea. It was really a great night.

Me and Natasha went over to Danielle’s house one night and Danielle made us the yummiest Crust-less Quiche and made mine without cheese (I don’t do Gluten or Dairy). It was -so- good. She topped it with cut Avocado and sprinkled some hot sauce and pesto on the side. For dessert she came out with the prettiest fruit platter. We also had two pots of tea. Almond and Maple and then a Fruity tea with Mango. I felt like we were eating at a five star restaurant! It was lovely.

I met up with LeeLee and Holly and went to Kitchen Kabarat and then to Starbucks to chat and take photos. It was so great seeing them again since the last time I saw them was almost two years ago! LeeLee and I have been friends since 2009 and in that time had falling outs but yet somehow always manage to come back into each others lives again. I truly care about her very much and we have an incredible soul connection that is rare to find with many people. I am happy to have her back in my life again and it’s always so wonderful to see her beautiful girlfriend Holly who is truly one of the sweetest people I’ve ever met. When you are around good people it’s easy to have fun even just sitting at Starbucks!

I am back in Massachusetts now and missing everyone already. We are in the process of seriously looking at apartments on Long Island now that Matthew has such a good job. I think I will be moving within the next few months. It was be amazing to be with my love and my dog every day and to be so much closer to all of my girlfriends. I’m really excited for the change!

The Eye Cream is really wonderful at hydrating my under eye area and reducing puffiness. It’s incredibly moisturizing and sinks right into the skin!

I am so in love with the Honey Love Microdermabrasion 3-in-1 cleanser, mask & exfoliator. I have been using it for the past month and the results are phenomenal. It is definitely my favorite product from the entire line.

It is so important to stay positive despite setbacks in life. If there is one drastic thing that has changed about me in the past four years, it is my outlook on everything regarding my health issues and my struggles. I refuse to let myself get down for very long. Many people think that positive thoughts are something that people are just gifted with. That is not the case. It takes practice and patience. Positivity is something that you have to work at and after awhile it will come naturally to you.

I hope everyone who celebrates Thanksgiving had a wonderful Holiday! Mine was really lovely. I celebrated it with Matthew and some of my family members. I ate way too much but it was worth it! Speaking of family – My nephew had his baptism this past weekend. I was honored to be the one to hold him while he was being baptized and to be his Godmother! Although I was raised Catholic, I do not consider myself a religious person. I do not abide by nor believe in a lot of what religion entails, however I do consider myself to be extremely spiritual. I believe in a higher power, whether or not it is the same God that the Catholic religion believes in is entirely irrelevant to me. I believe in love, honesty, integrity and kindness and that should be all that matters in the end anyway.

Carter is getting so big already!!! He is truly a little angel. I love him so very much.

Gluten-Free and Vegan Crepes and a Vanilla-Nut Latte with Almond Milk.

I swear this Vegan Vanilla-Nut Latte is the best thing that ever happened to my life lately. I’m obsessed.

I have been making batches of body scrubs lately. I am thinking of packaging them and giving some to loved ones for Christmas!

I might even do a giveaway of them if anyone would be interested :)

I was really ill with a 24 hour stomach virus the other day which seemed to make my Fibro act up again and also really irritated my stomach. I have been taking spoonfuls of Unsulphured Blackstrap Molasses because it really helps with my stomach irritation. I have noticed a significant change in my energy levels since doing the round of Iron Transfusions. I am finally able to wake up early and stay awake during the day and to be able to be productive! It feels amazing. Matthew started his new dream  job today!! I am so excited that everything is finally coming together!

If you missed one of my latest posts about my DIY Apple Cider Vinegar Hair Rinse, you should definitely check it out! It has made such a huge difference in my hair and everyone that has tried it so far is LOVING it. I will be having many more DIY posts in the future. I love to share homemade beauty treats with everyone! Natural beauty doesn’t have to be difficult or expensive!!! It makes my day when someone tells me that my blog has inspired them to change up their products to more natural ones.

The most important thing is to be aware of what we are putting in and on our bodies. There is no need to be obsessive or paranoid about it. Just focus on being a little bit more clean one day at a time :)

Food For Thought | The Green Goodness Omelet

I came up with this recipe one morning when I was feeling extra creative and  tired of making the typical Spinach Omelet.  I was inspired to blend everything together to create more of a souffle type omelet. I invented  what I have coined  the “Green Goodness Omelet” because it is  packed with the antioxidants lutien and zeaxantin (great for protecting and strengthening our eyes), as well as protein and iron! Don’t let the green color fool you, it’s delicious! And oh so healthy.

What You Will Need:

Spinach (preferably organic)

Two large Eggs (also preferably organic and cage free)

Dairy-Free Daiya Cheddar Cheeze (or any cheese of your preference!)

Blender or Vitamix!

What To Do:

1.) Put a cup  (give or take) of Spinach into Vitamix (or blender), add two eggs and however much cheese you prefer (I like just a little chunk!)

2 ) Blend everything until it turns to liquid.

3.) Empty contents from Vitamix into a greased (I prefer a spray of coconut oil) large skillet or wok .

4.) Cook on low to medium heat until the omelet starts to get stiff enough to where you can flip it over

5.) remove from heat, let sit for a minute and then enjoy your green and protein filled meal!

Remember that looks can be deceiving… This will get your morning off to great start. I promise, it’s delicious!

Food For Thought | Roasted Butternut Squash, Japanese Sweet Potato and Carrot Soup.

I came up with this recipe on my own as I was really craving a squash soup but most of the recipes I found contained things like onion and garlic which unfortunately I have a very hard time digesting. A lot of the soups also contained a milk type ingredient and I really just wanted something very simple and yet delicious and filling. I came up with this simple recipe which only contains three ingredients and is really comforting and yummy! Perfect for Fall, for anyone who likes soup and also great for anyone with digestive issues as it’s really easy to digest and contains such simple ingredients. Enjoy!

What you will need for this recipe:

  • 1 Butternut Squash
  • 1 Japanese Sweet Potato
  • 3 Carrots

What to do:

  • Preheat the oven to 400 and cut up the butternut squash and the sweet potato and put them on an oiled baking sheet. Bake for 45 mins to an hour or when the squash and sweet potato are soft. (roasting brings out the sweetness of the vegetables so you don’t want to burn them)
  • While you are waiting for the squash and sweet potato to bake, start cutting up the three carrots. put them in a frying pan with a little grapeseed oil. cook on low heat.
  • Once you feel that the carrots are soft enough to stick a fork through, transfer them to a large pot filled with two liters of water. Bring the carrots and water to a boil.
  • When you feel the squash and sweet potatoes are done, transfer them into the boiling pot and let simmer.
  • Put all ingredients in a vita-mix or other blender and blend really well.
  • When soup is cool, add half a teaspoon of ground nutmeg, add salt and pepper to taste!
